Chicken and Summer Vegetable Tostadas

This Chicken Tostada from Cooking Light was absolutely delicious. We added jalapeƱos, used just a mixed mexican shredded cheese instead of Monterrey Jack cheese, and served them with sour cream. Best to make the tostada itself right before eating it.
